Air Fryer Rhubarb and White Chocolate Muffins

Bake irresistible rhubarb and white chocolate muffins in your air fryer with this quick and easy recipe! These golden-brown treats are moist, fluffy, and bursting with sweet white chocolate and tangy rhubarb.

Rhubarb Muffins

Method

  1. Heat the air fryer on 160oc for 2 mins.
  2. Mix the oil, yoghurt, egg and milk in a large bowl, then fold in the sugar, flour and bicarbonate of soda and combine well.
  3. Fold in the rhubarb and white chocolate chips
  4. Spoon the mixture into an air fryer muffin tin filled with paper cases to three-quarters full (should make 6-8 muffins).
  5. Place in the air fryer basket and cook for 12-15 mins until the muffins are golden brown and an inserted skewer comes out clean

Ingredients

  • 75g Princes rhubarb in light syrup
  • 60ml Vegetable oil
  • 75g Natural yoghurt
  • 1x Egg
  • 2x tbsp Milk
  • 100g Caster sugar
  • 150g Self-raising flour
  • ¼ tsp Bicarbonate of soda
  • White chocolate chips
