Creamy chicken orzo

This creamy chicken orzo is a rich, comforting dish that comes together in just one pan! Chicken Orzo

Method

  1. Heat olive oil in a pan over medium heat. Cook the onion for 5-10 minutes until soft, then add the garlic and cook for another minute.
  2. Add the orzo, chicken stock cube, and water. Cook for 4-5 minutes until the stock reduces by half.
  3. Stir in the chicken in white sauce, garden peas, chopped tomatoes, and oregano. Mix well.
  4. Cook, stirring occasionally, until the orzo has softened (7-10 minutes).
  5. Taste and adjust seasoning if necessary.
  6. Stir to combine and serve with Parmesan cheese and fresh basil.

  • 100g garden peas
  • 1x 400g can Napolina chopped tomatoes
  • 1x tbsp olive oil
  • 1x white onion (diced)
  • 3x garlic cloves (minced)
  • 1x chicken stock cube
  • 250ml water
  • 1x tsp oregano
  • 400g orzo
  • 30g Parmesan cheese (grated)
  • Fresh basil (to garnish)
