This creamy chicken orzo is a rich, comforting dish that comes together in just one pan! Tender orzo is simmered with savoury chicken in white sauce, sweet garden peas, and aromatic oregano for a perfectly balanced meal. Finished with parmesan and fresh basil, it’s an easy, fuss-free dinner that’s ideal for busy weeknights.
Method
- Heat olive oil in a pan over medium heat. Cook the onion for 5-10 minutes until soft, then add the garlic and cook for another minute.
- Add the orzo, chicken stock cube, and water. Cook for 4-5 minutes until the stock reduces by half.
- Stir in the chicken in white sauce, garden peas, chopped tomatoes, and oregano. Mix well.
- Cook, stirring occasionally, until the orzo has softened (7-10 minutes).
- Taste and adjust seasoning if necessary.
- Stir to combine and serve with Parmesan cheese and fresh basil.
