Tropical Fruit Breakfast Bowl with Quinoa, Nuts & Seeds

Start your day in the best possible way with this Tropical Fruit Breakfast Bowl. Packed with health-boosting foods, delicious flavours, and colourful fruits, nourish your body and begin the day feeling amazing!
Adding canned fruit to your breakfast time can help you boost your five a day intake first thing in the morning. Plus, it contains quinoa, which is a good source of protein and perfect when eaten as part of a balanced and varied diet.

1Bring almond milk and cinnamon stick to the boil and reduce to a simmer.
2Next pour the dried quinoa into the almond milk and simmer until the quinoa is cooked (around 5 - 10 minutes). Leave the quinoa to one side until completely cooled.
3When cool, mix the quinoa with the yoghurt and maple syrup.
4Place the pumpkin seeds, pistachios and hazelnuts onto a non-stick baking tray and into a pre heated oven at 180c fan for 10 minutes.
5Next blend the peaches and mix in the canned mango and canned pineapple.
6Spoon the quinoa mix into a serving bowl or glass and pour the fruit mix on top.
7Finish off by sprinkling the mixed nuts and seeds over the top.

150 g Canned Pineapple
150 g Canned Peaches
100 g Uncooked Quinoa
12 g Hazelnuts
1/2 liter Almond Milk
300 g Plain Low Fat Yogurt
12 g Pumpkin Seeds
12 g Pistachios
1 Cinnamon Stick
70 g Maple Syrup
