Our Spiced, Turkey Brunch Beans are a healthy (and a delicious) start to the day!
This recipe includes haricot beans, which are high in protein and fibre and low in fat. To make these vegan, simply replace the turkey with tofu and leave out the honey.
1Take the turkey strips and mix with the oil, paprika and cumin. Leave to one side to marinate.
2In a non-stick pan over a low to medium heat, add the oil, salt, pumpkin seeds and oats. Lightly brown in the pan.
3In a medium sauce pan over a medium to high heat, add the oil, white onion and salt. Cook until the onion is soft and translucent.
4Next, add the chilli powder, cumin, paprika, garlic puree, ginger puree and honey, cooking for a further 4 minutes.
5Add the Worcester sauce, vinegar, tomato puree and canned tomatoes. Next add the haricot, red kidney, black beans and roasted sweet potato. Simmer for 10 - 15 minutes.
6In a non-stick frying pan over a high heat, fry the marinated turkey off (2 minutes each side should be enough).
7Layer up the dish, beginning with the beans, turkey strips, sliced avocado and finally, top with the toasted oats and seeds.

120 g Red Kidney Beans
120 g Black Turtle Beans
200 g Roasted Sweet Potato
1 tbsp Oil
150 g Fine Diced White Onion
1 tsp Salt
1/3 tsp Chilli Powder
1/3 tsp Ground Cumin
1 1/2 tsp Smoked Paprika
1 tbsp Garlic Puree
1 tbsp Ginger Puree
1 1/2 tbsp Worcester Sauce
1 tbsp Red Wine Vinegar
40 g Tomato Puree
400 g Canned Tomatoes
25 g Honey
1 Avocado, sliced
For the turkey strips:
400 g Turkey Strips
1 1/2 tbsp Rapeseed Oil
1 tsp Smoked Paprika
1/3 tsp Cumin Powder
For the toppings:
40 g Oats
20 g Pumpkin Seeds
1/2 tsp Rapeseed Oil
Pinch of Salt
