Indian ‘fakeaway’ of dreams.
Our Samosa Pie is made using paneer, canned chickpeas, canned potatoes and flaky, golden, melt in your mouth filo pastry.
It’s an explosion of delicious ingredients and spices.
1Melt the butter in a large frying pan over a high heat - fry the onion until soft.
2Add in the paneer & potatoes and fry gently until browned. Next pour into a deep oven proof baking dish.
3In the frying pan, add in the madras paste, lentils, chickpeas, mango chutney and coconut milk.
4Simmer until coconut milk has reduced and thickened, then add some seasoning to taste. Finish by pouring into the oven proof baking dish, with the paneer & potatoes.
5Scrunch the filo pastry sheets and place them on top of the paneer mix until the mix is covered, then brush with butter and sprinkle with black onion seeds.
6Place into a preheated oven at 180c for 15 minutes until filo is crisp and golden.
