Samosa Pie with Paneer

Indian ‘fakeaway’ of dreams.

Our Samosa Pie is made using paneer, canned chickpeas, canned potatoes and flaky, golden, melt in your mouth filo pastry.

It’s an explosion of delicious ingredients and spices.

Method

  1. Melt the butter in a large frying pan over a high heat – fry the onion until soft.
  2. Add in the paneer & potatoes and fry gently until browned. Next pour into a deep oven proof baking dish.
  3. In the frying pan, add in the madras paste, lentils, chickpeas, mango chutney and coconut milk.
  4. Simmer until coconut milk has reduced and thickened, then add some seasoning to taste. Finish by pouring into the oven proof baking dish, with the paneer & potatoes.
  5. Scrunch the filo pastry sheets and place them on top of the paneer mix until the mix is covered, then brush with butter and sprinkle with black onion seeds.
  6. Place into a preheated oven at 180c for 15 minutes until filo is crisp and golden.

Ingredients

  • 25 g Butter
  • 1 White Onion
  • 225 g Diced Paneer
  • 75 g Madras Cooking Paste
  • 1 Canned Lentils
  • 1 Canned Chickpeas
  • 1 Canned Potatoes
  • Salt & Pepper
  • 70 g Mango Chutney
  • Melted Butter (salted – to brush over pastry)
  • Black Onion Seeds
