Peach Pancakes

For a fruity breakfast or as a quick and easy dessert using fruit, this peach pancakes recipe is ideal. Made with semi-skimmed milk and tasty canned peaches, this dish is a great way to cook with the kids! Easy to follow and ready in minutes…

1Using an electric hand blender whisk all the pancake ingredients together until smooth, it should be a thick mixture.

2Heat a non-stick pan with a little vegetable oil.

3Drop dessert spoons of the mixture into the pan- don’t over crowd so you can turn easily.

4They will start to bubble on top, then you can flip them over, both sides should be golden brown.

5Pile them up per person and top with the peaches, lashings of maple syrup and a dusting of icing sugar.

2 tbsp caster sugar

130 ml milk

1 large egg beaten

2 tbsp melted butter

1 x 415g can of peach slices in light syrup

Tsp of maple syrup

Icing sugar to dust
