Mushroom and Jalapeño Pizza

This short-cut pizza is a treat for the whole family and is a fun way to get the kids

creative in the kitchen. No need to make your own dough; as we use pre-bought pizza bases in this recipe.

1Pre-heat the oven to 220ºC, 425ºF, Gas Mark 7. Put the pizza bases onto a lightly greased baking tray and brush them with a little olive oil.

2Gently mix together all the ingredients for the tomato and spread this on top of each pizza base.

3Arrange the topping ingredients over the pizzas and bake for 10 minutes until crisp and golden. Finish with basil leaves.

4 bought pizza bases (150g each)

Olive oil, for brushing

For the tomato sauce:

1 x 400g canned chopped tomatoes, drained

2 tbsp tomato puree

1 tsp crushed garlic

2 tsp dried oregano

For the topping:

3 x 290g canned sliced mushrooms, drained

1 x 325g canned sweet corn, drained

4 large tomatoes, thinly sliced

125g mozzarella cheese, torn

Jalapeño peppers, sliced, as desired

To serve:

Handful basil leaves
