Spicy Falafel Wrap

We all need our lunch recipes to be simple, quick to make and not forgetting the most important factor… tasty! This recipe is all three and more. Spice is optional, but if you dare to add more, please be our guest.

1Heat 1 tbsp oil in a pan and saute the onion and garlic for 3 mins to soften.

2Place the chickpeas, peas, onion, spices, flour, herbs and a pinch of salt in a food processor and pulse until combined.

3Shape the mixture into 12 balls – about the size of a walnut, then flatten slightly. Heat the remaining oil in a pan and fry the falafel, turning regularly for five minutes.

4To make the tzatziki combine the yoghurt, garlic, cucumber and mint. Serve falafel with tzatziki and warmed tortilla wraps.

1 x 400g canned chickpeas

1 x 300g canned peas

3 tbsp rapeseed oil

1 medium onion, finely chopped

1 garlic clove, crushed

1 tsp chilli power

1 tsp ground cumin

Pinch salt

Handful fresh coriander, chopped

Handful fresh mint, chopped

2 tbsp flour, plus a little extra for dusting

4 wholemeal tortilla, to serve

For the Tzatziki:

300ml 2% fat Greek yoghurt

1 garlic clove, crushed

Half cucumber, diced

Handful fresh mint, chopped
