Creamy yet light, this Chicken and Mushroom Lasagne is a simple and delicious twist on the Italian classic. Made using canned chicken in white sauce, canned mushrooms, and canned sweetcorn - this recipe will help you cut down on your prep time.
Plus, sneaking in those extra veggies (like canned sweetcorn) can help the kids towards their five a day.
1Preheat the oven to 180c (fan).
2In a bowl, mix together the chicken, mushrooms and sweetcorn.
3In the following order, layer: chicken mix, lasagne sheet, chicken mix, lasagne sheet, chicken mix, lasagne sheet, chicken mix, lasagne sheet.
4Next, mix the mozzarella, cheddar and double cream into a paste.
5Pour the cheese mix on top of the final lasagne sheet, spreading it evenly.
6Cook the lasagne in a preheated oven at 180c (fan) for 35 - 40 minutes.
7Serve and enjoy!
