Baked Meatballs

An Italian classic made easy with canned ingredients, these mouth-watering meatballs are made with a tasty canned tomato sauce and are guaranteed to be a family favourite. They’re perfect for freezing and saving for a mid-week dinner or when you need a hearty lunch in a hurry.

1In a large mixing bowl put in the mince, onion, garlic, salt and pepper. Using your hands, work the ingredients together - the mince should be smooth and the mixture should hold together easily. Roll them into good sized meat balls and put to one side

2In an oven proof dish add the stock, soup and chopped tomatoes in and mix well with a spoon. Place your meatballs on top of the sauce so they are just sticking out of the top. Sprinkle with the cheese and lay the mozzarella on the top

3Bake in the oven for 40 minutes until golden and bubbling

4Sprinkle a handful of parsley and serve

1 x 500g pack of lean beef mince

1 onion finely diced

2 cloves of garlic finely chopped

salt and pepper

1 x 400g can of chopped tomatoes

1 x 400g can of tomato soup

1/4 pint of veg stock

2 (50g) good handfuls of grated parmesan

1 ball of mozzarella sliced

a handful of chopped parsley
